Week Eleven – Day Three – Dinner (Bacon Cheeseburger and Chips)

I have been going through the process of using up what is in my freezer this week. Not only to save money, there is no point in buying more food when I have loads of things in the freezer waiting to be eaten, but also to free up some space. I share a house with five other people and so space is at a bit of a premium, in fact I only have one freezer drawer and so, as I am sure you can imagine, that fills up pretty quick!

Having a root around in said freezer drawer turned up some of the burgers I made a while ago (I thought I had eaten them all but obviously not). I decided burger and chips would be a good way to end my Saturday. (Burger recipe from before is here)

For the chips, I took one large potato and chopped into chip shapes and liberally coated them with my favourite mix of ‘chip spices’ (Smoked paprika, garlic powder, oregano, salt and pepper) and plenty of FryLight. These went into a hot oven (around 210°C) for about 30mins until they were cooked through and crispy on the outside.

While the chips were cooking, I pan fried (with FryLight) the burger in a frying pan, alongside a bacon medallion and one Babybel Light. Once the burger was pretty much cooked and the Babybel was nice and melty, I moved the cheese on top of the burger to finish off cooking.

When everything was cooked and ready to go, it was a simple job of assembling it all with all my favourite toppings, onions, gerkins and a few peppers. I also used a couple of syns on some mayo and some tomato ketchup (2 syns in total). The cheese and the bun were my healthy extra choices so I only used 2 syns for the whole meal 🙂

Week Ten- Day One – Dinner (Burger and Chips)

I have been completely rubbish with this blog in the last few weeks so I am really sorry! 😦 I’ve also been really (really) bad with my food over the last week. Ate too much takeaway which is not good for my goal or for my bank account! With all the bad, I am putting it completely behind me and moving on with a fresh low syn week.

I’ve made my plan for the week, which factors in the day out I have planned on Saturday and makes the best use of what I already have in the freezer and cupboards.

For breakfast I had 2 slices of wholemeal toast (HEB) with 2 Laughing Cow Extra Lights (HEA), then lunch was a chicken and bacon (fat cut off) salad with no dressing from the local pub. I also snacked on a few apples, some fishsticks and the remaining 4 Laughing Cow from my HEA allowance.

I really fancied chips for my dinner so SW chips with plenty of FryLight, paprika, garlic powder, salt and pepper. I wanted to put some salad together but didn’t really have much in the fridge so I went with some green peppers, red onion and gerkins. Sounds a bit bizarre but tasted so good! I had burgers in the freezer from before (Previous post – Burger and Chips) so I just cooked them in a pan with FryLight from frozen.

I had a tbsp each of tomato ketchup (1 syn) and light mayo (2 syns). So for the entire day I only had 3 syns 🙂

Week Six – Day Three – Dinner (Burger and Chips)

I have a confession to make…I went out last night and had quite a few drinks 😦 Definitely went over my syn allowance yesterday! So, today I woke up hungover and craving bad food but I decided I wanted to limit the damage and hope I haven’t completely scuppered my weight loss chances this week.

I had bacon and eggs this morning but by the evening I was still craving bad food so I went for a syn free burger and chips which totally fooled my body into thinking it was getting what it wanted!

I took 500g lean beef mince and added two small finely chopped onions, plenty of worcestershire sauce, garlic powder, mixed herbs, salt, pepper and a beaten egg. This was all thoroughly mixed through and then shaped into eight beef burger shapes. I made syn free chips by chopping potatoes into chip shapes, covering them in salt, pepper and cajun spices. I then put these on a baking sheet with plenty of FryLight and popped them in a hot oven for about 30mins. While these were cooking, I pan fried the burgers in some more FryLight.

I put together some salad and prepped a brown roll (HEB). I also mixed 0.5 tsp of mustard powder with 0.5 tsp water and then mixed this into 1 tbsp light mayo (1 syn). I popped a cooked burger on the roll and topped with the mayo mixture, some raw red onion and some sliced gerkins. With the salad and chips it made a very tasty meal and finally kicked the hangover!
